Chocolate Banana Cake

Ingredients

- 1/2 cup salted butter
- 2 ounces unsweetened baking chocolate
- 3/4 cup ripe banana, mashed
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 teaspoon baking powder
- 1 cup flour
Recipe
- 1 melt butter and chocolate. cool to lukewarm.
- 2 add mashed banana; stir well.
- 3 add sugar, vanilla, and eggs; stir well.
- 4 combine dry ingredients and add to mixture, mixing just enough to incorporate.
- 5 pour into a greased 8รข€? round pan. bake at 350 f for 25 minutes or until center comes out clean.
- 6 my variations: substitute fructose for the sugar;.
- 7 substitute 3/4 cup organic oat flour (or whole wheat pastry flour) plus 1/4 cup soy flour for the regular flour.
