Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 teaspoon vanilla extract
  • 2/3 cup oil (olive if you can afford, not too important of you cant)
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 teaspoons baking soda
  • 1 1/4 cups brown sugar
  • 1 cup flour
  • 1 1/2 cups whole wheat flour
  • 3 1/2 cups grated peeled carrots
  • 100 g roughly chopped walnuts

Recipe

  • 1 preheat oven to 180 degrees celsius.
  • 2 beat eggs, mix in oil, nutmeg, cinnamon, vanilla, brown sugar and baking soda.
  • 3 add flour and mix - batter should be thick and smooth.
  • 4 add walnuts and then grated carrots. carrots will bring the mixture back to a consistency you can pour into a greased 10 inch round pan.
  • 5 cook 45 minutes or until inserted skewer comes out clean.
  • 6 ice with cream cheese icing.
