Banana Cake

Ingredients

- 3 tablespoons lemon juice
- 2/3 cup milk
- 1 1/2 cups self-raising flour
- 1 cup sugar
- 1 1/2 teaspoons bicarbonate of soda
- 1 1/2 teaspoons salt
- 280 g butter, softened
- 3 large bananas, mashed
- 3 eggs
- 2/3 cup walnuts, chopped
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
Recipe
- 1 grease and flour two 23cm round tins or 1 large roasting dish. set oven to 180c (355f).
- 2 combine the milk and lemon juice and set aside for it to curdle slightly.
- 3 sift flour, cinnnamon and nutmeg into a large bowl. add sugar, bicarb and salt.
- 4 add the mashed bananas ,butter and milk. mix well with electric beaters on low speed.
- 5 add the eggs and beat for 2 minutes until combined, stir in walnuts.
- 6 divide mix into the tins and bake for 35-45 minutes for the two tins or 45-50 for the one tin. cool on wire rack.
- 7 to serve dust with icing sugar.
