Banana Buttermilk Toffee Cake

- 1 (18 ounce) pkge. yellow cake mix
- 3 large eggs
- 1 cup buttermilk
- 1 cup mashed ripe banana
- 1/2 cup oil
- 1 cup toasted pecans
- 3 tablespoons butter
- 3 tablespoons brown sugar, packed
- 3 tablespoons heavy cream
- 2/3 cup powdered sugar
- 1/2 teaspoon vanilla
- 3/4 cup chopped chocolate-covered english toffee bar
- 1/2 cup chopped toasted pecans
Recipe
- 1 in a large mixing bowl, beat cake mix, eggs, buttermilk, mashed banana, and oil on low speed until moistened. beat at medium speed 2 minutes.
- 2 fold in 1 cup pecans; poue int a greased and floured 13 x 9 inch psn.
- 3 bake at 350 degrees for 35-38 minutes. cool.
- 4 glaze:.
- 5 in a small saucepan, melt butter and brown sugar. add heavy cream and simmer 1 minute.
- 6 remove from heat and add powdered sugar and vanilla and whisk until smooth. spread the glaze over the cake.
- 7 sprinkle with the chopped toffee bars and the chopped pecans.
