Banana Cake

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup wheat germ
  • 4 medium ripe bananas, mashed
  • 1/2 cup sugar
  • 3/4 cup vanilla-flavored soymilk
  • 1 teaspoon vanilla extract
  • 1/3 cup blueberries or 1/3 cup raisins
  • vegetable oil cooking spray, for pans

Recipe

  • 1 pre-heat oven to 350°f.
  • 2 in a medium sized bowl, mix whole wheat pastry flour, baking soda, salt and wheat germ.
  • 3 in a large bowl, mash bananas and mix in sugar.
  • 4 mix in soymilk and vanilla.
  • 5 add the flour mixture, stir lightly to mix.
  • 6 fold in blueberries.
  • 7 lightly coat 2 8-inch cake pans, and spread half the batter into each.
  • 8 bake for about 20-25 minutes, or until a toothpick inserted in the centre comes out clean.
