Banana Cake With Cashews

Ingredients
- 3 eggs
- 1 cup sugar
- 3/4 cup cream
- 1 1/2 cups flour
- 4 lbs ripe bananas
- 1 cup fresh cashews, coarsely chopped
- 1 cup fresh coconut, grated
Recipe
- 1 using an electric mixer on low , beat the eggs and sugar together.
- 2 when thick and pale add cream and mix for 1 minute more.
- 3 add sifted flour to the bowl and blend with a wooden spoon.
- 4 peel and mash bananas and add them to the nuts and coconut.
- 5 add mixture to the batter
- 6 mix until all the ingredients are blended, do not overmix.
- 7 grease 2 8 inch pans and bake at 350 f for 1 hour.
- 8 it will be golden brown when done.
