Blueberry Brunch Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 16
  • 1 cup flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup 1% low-fat milk
  • 1/2 cup canola oil
  • 1 tablespoon lemon juice
  • 1 cup fresh blueberries or 1 cup frozen blueberries
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/2 cup pecans (optional)

Recipe

  • 1 combine flour, sugar, baking powder and salt. set aside.
  • 2 combine egg, milk, oil and lemon juice.
  • 3 add dry ingredients, mixing well.
  • 4 pour into 8x8 greased pan.
  • 5 sprinkle with blueberries.
  • 6 combine remaining ingredients. sprinkle over blueberries.
  • 7 bake 40 minutes at 350°f
  • 8 recipe may be doubled in a 9x13 pan.
