Baked Chocolate Cheesecake

Total Time: 1 hr 35 mins Preparation Time: 20 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 15
  • 100 g butter, melted
  • 200 g shortbread cookies, crusehd
  • 600 ml cream
  • 250 g cream cheese, softened to room temp
  • 150 g chocolate, melted
  • 4 eggs
  • 2 teaspoons vanilla

Recipe

  • 1 pre-heat your oven to 140oc.
  • 2 combine the cookie crumbs and butter, press into a 24cm spring form tin & refrigerate until firm.
  • 3 beat the cream cheese until soft and creamy. gradually beat in the cream, it will go thick and creamy (beat for 3-5 minutes).
  • 4 whisk in the eggs and vanilla.
  • 5 finally fold through the melted chocolate.
  • 6 pour into the base (i pour over the back of a large spoon) and bake in the pre-heated oven for 75 minutes. the center should resemble set jelly.
  • 7 leaven in the oven with the door open until at room temp (could take upto 2 hours).
  • 8 refrigerate until serving time. can be made upto 2 days ahead of time.
