Baked Chocolate Cheesecake

Ingredients

- 100 g butter, melted
- 200 g shortbread cookies, crusehd
- 600 ml cream
- 250 g cream cheese, softened to room temp
- 150 g chocolate, melted
- 4 eggs
- 2 teaspoons vanilla
Recipe
- 1 pre-heat your oven to 140oc.
- 2 combine the cookie crumbs and butter, press into a 24cm spring form tin & refrigerate until firm.
- 3 beat the cream cheese until soft and creamy. gradually beat in the cream, it will go thick and creamy (beat for 3-5 minutes).
- 4 whisk in the eggs and vanilla.
- 5 finally fold through the melted chocolate.
- 6 pour into the base (i pour over the back of a large spoon) and bake in the pre-heated oven for 75 minutes. the center should resemble set jelly.
- 7 leaven in the oven with the door open until at room temp (could take upto 2 hours).
- 8 refrigerate until serving time. can be made upto 2 days ahead of time.
