Blueberry Crumb Coffee Cake

Ingredients
- 3/4 cup sugar
- 1/4 cup shortening, softened
- 2 egg whites
- 1/4 cup soymilk (or milk)
- 1/4 cup orange juice (if none use all milk)
- 2 cups unbleached flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups blueberries, well drained
- 1/2 cup sugar
- 1/2 cup unbleached flour
- 1/2-1 teaspoon cinnamon
- 3 tablespoons melted butter
Recipe
- 1 heat oven to 375 degrees.
- 2 grease and flour a square pan (9x9).
- 3 mix sugar, shortening and egg throroughly.
- 4 stir in soymilk/milk and oj.
- 5 sift in flour and baking powder, and salt. mix well.
- 6 fold in blueberries.
- 7 in a seperate small bowl. mix together ingredients for crumb topping.
- 8 pour batter into greased pan.
- 9 top with crumb topping.
- 10 bake 45-60 minutes.
