Blueberry Crumb Coffee Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 3/4 cup sugar
  • 1/4 cup shortening, softened
  • 2 egg whites
  • 1/4 cup soymilk (or milk)
  • 1/4 cup orange juice (if none use all milk)
  • 2 cups unbleached flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries, well drained
  • 1/2 cup sugar
  • 1/2 cup unbleached flour
  • 1/2-1 teaspoon cinnamon
  • 3 tablespoons melted butter

Recipe

  • 1 heat oven to 375 degrees.
  • 2 grease and flour a square pan (9x9).
  • 3 mix sugar, shortening and egg throroughly.
  • 4 stir in soymilk/milk and oj.
  • 5 sift in flour and baking powder, and salt. mix well.
  • 6 fold in blueberries.
  • 7 in a seperate small bowl. mix together ingredients for crumb topping.
  • 8 pour batter into greased pan.
  • 9 top with crumb topping.
  • 10 bake 45-60 minutes.
  • 11 enjoy!
