Apple Pecan Raisin Upside Down Cake

Ingredients
- 3 apples, peeled and diced
- 1 cup raisins
- 1/3 cup butter, melted
- 1/2 cup light brown sugar
- 1/4 cup chopped pecans
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup milk
- 1 egg
- 1/3 cup shortening
- 1 teaspoon vanilla
Recipe
- 1 mix together in a heavy skillet the first five ingredients (apples thru pecans).
- 2 simmer for 10 minutes and cool.
- 3 mix together remaining ingredients and beat until well blended.
- 4 pour batter over apple mixture and bake at 350° for 50 minutes.
- 5 turn cake upside down onto plate immediately.
- 6 leave for a few minutes so all the apples and sauce will fall onto the cake.
