Apple Pecan Raisin Upside Down Cake

Total Time: 1 hr 15 mins Preparation Time: 25 mins Cook Time: 50 mins

Ingredients

  • 3 apples, peeled and diced
  • 1 cup raisins
  • 1/3 cup butter, melted
  • 1/2 cup light brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup shortening
  • 1 teaspoon vanilla

Recipe

  • 1 mix together in a heavy skillet the first five ingredients (apples thru pecans).
  • 2 simmer for 10 minutes and cool.
  • 3 mix together remaining ingredients and beat until well blended.
  • 4 pour batter over apple mixture and bake at 350° for 50 minutes.
  • 5 turn cake upside down onto plate immediately.
  • 6 leave for a few minutes so all the apples and sauce will fall onto the cake.
