Apple Pear Cake

Ingredients

- 2 cups apples, shredded
- 2 cups pears, shredded
- 2 cups sugar
- 1 1/4 cups vegetable oil
- 1 cup raisins
- 1 cup pecans, chopped
- 2 eggs, beaten
- 1 teaspoon vanilla
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 ounces cream cheese, softened
- 1/4 cup butter, softened
- 3 cups confectioners' sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla
Recipe
- 1 in a large bowl combine the first eight (8) ingredients.
- 2 combine dry ingredients; stir into fruit mixture.
- 3 pour into greased 13x9-inch baking pan. bake at 325°f for 1 hour or until a toothpick inserted near the center comes out clean.
- 4 cool on a wire rack.
- 5 for the frosting, beat cream cheese and butter in a mixing bowl until fluffy.
- 6 add sugar, milk and vanilla; mix well.
- 7 spread over cooled cake.
- 8 store in the refrigerator.
