Apple Pear Cake

Ingredients

  • Servings: 12
  • 2 cups apples, shredded
  • 2 cups pears, shredded
  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 1 cup raisins
  • 1 cup pecans, chopped
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups confectioners' sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla

Recipe

  • 1 in a large bowl combine the first eight (8) ingredients.
  • 2 combine dry ingredients; stir into fruit mixture.
  • 3 pour into greased 13x9-inch baking pan. bake at 325°f for 1 hour or until a toothpick inserted near the center comes out clean.
  • 4 cool on a wire rack.
  • 5 for the frosting, beat cream cheese and butter in a mixing bowl until fluffy.
  • 6 add sugar, milk and vanilla; mix well.
  • 7 spread over cooled cake.
