Apple Pancakes With Spelt

Ingredients

  • 1/2 cup unbleached flour
  • 1/2 cup spelt flour
  • 1/2 cup ground walnuts
  • 1/4 cup sugar
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 pinch salt
  • 1 cup 2% low-fat milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, separated
  • 2 teaspoons lemon zest
  • 1 cup apple, peeled and grated
  • 12 slices apples, cut 1/4 inch thick (core apple, and cut horizontally)
  • maple syrup, for drizzling

Recipe

  • 1 preheat oven to 200°f.
  • 2 in a large mixing bowl, whisk together flours, walnuts, sugar, baking powder baking soda, and salt. set aside.
  • 3 in a separate bowl, whisk together milk, butter, egg yolks and lemon zest. in another bowl, beat egg whites on medium speed until soft peaks form.
  • 4 pour milk mixture over dry ingredients and stir until just incorporated (do not overmixed).
  • 5 pour 1/4 cup of the batter onto a lightly greased griddle or skillet over medium heat. place an apple slice on top of each pancake and cook until top is speckled with bubbles and under side is golden brown, 3-5 minutes.
  • 6 turn with spatula an cook until apple is golden and tender and pancake is cooked through, about 3 minutes.
  • 7 if the pancakes are getting too dark before the inside is cooked through, reduce heat and cook for a longer time; the juice from the apple may slightly increase cooking time.
  • 8 transfer pancakes to a foil-lined baking sheet and keep warm in a pre-heated oven. continue cooking pancakes until all batter has been used and serve immediately with maple syrup, if desired.
