Cherry Bubble Cake

Ingredients
- Servings: 4
- 2 cups self-rising flour
- 2 cups granulated sugar
- 2 large eggs, well beaten
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup red tart cherries, pitted & with juice
- 1 cup granulated sugar
- 1/2 cup evaporated milk
- 1/2 butter or 1/2 margarine
- 1 teaspoon vanilla
Recipe
- 1 cake:
- 2 preheat oven to 300°.
- 3 lightly grease flour a 9 x 9 x 3 cake pan.
- 4 mix all ingredients together well.
- 5 bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- 6 icing:.
- 7 mix all ingredients in a medium saucepan & bring to a boil over medium-high heat.
- 8 cook over a low boil, for 2-3 minutes, stirring constantly.
- 9 pour over warm cake.
- 10 serve warm with a scoop of french vanilla ice cream. yum!
