Banana Macadamia Nut Muffins

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/4 cups mashed bananas (about 3 large)
  • 1/2 cup sugar
  • 1/4 cup dark brown sugar
  • 1/2 cup melted butter
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup unsalted macadamia nuts, toasted and chopped

Recipe

  • 1 preheat oven to 350° and grease or place cupcake liner papers in 12 muffin cups.
  • 2 sift first 4 ingredients into a large bowl.
  • 3 combine bananas, both sugars, butter, milk, egg and vanilla in a medium bowl.
  • 4 mix into dry ingredients, then fold in half of nuts.
  • 5 divide batter among prepared muffin cups and and sprinkle tops with remaining macadamia nuts.
  • 6 bake until muffins are golden brown and tester inserted into center comes out clean, about 25 minutes.
  • 7 transfer muffins to wire rack and let cool.
