Apple - Sour Cream Cake

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 1/4 lb unsalted butter (room temp.)
  • 1 cup sugar (you can use a little less if you like, i do)
  • 2 large eggs (room temp and well beaten)
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream, room temp is best (lt. sour cream is ok)
  • 2 large apples, peeled, cored, quartered and sliced thin
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar

Recipe

  • 1 in a med. size bowl, cream the softened butter and the sugar together.
  • 2 add the 2 well beaten eggs to the butter and sugar mixture and combine well.
  • 3 add the vanilla and mix in well.
  • 4 combine the flour, baking powder, baking soda and salt, (i sift together) in a separate bowl.
  • 5 starting with flour and ending with flour.
  • 6 add 1/3rd of the flour mixture to the butter, egg mixture. mix well.
  • 7 add 1/2 of the sour cream and mix well.
  • 8 add another 1/3rd of the flour mixture and mix well.
  • 9 add the remaining sour cream. mix well and add the remaining flour mixture. mix well. the dough will be thick.
  • 10 spread the dough in a greased and floured 7x11 or 9 inches sq. pan.
  • 11 quarter, peel and slice "thin" the 2 apples.
  • 12 place the apple slices in the dough (about 1/2 way in) over lap the slices to make look pretty. fill in small spaces with a smaller piece of apple. fill the top of the dough with apple slices.
  • 13 mix the cinnamon and sugar together. sprinkle the cake with the cinnamon/sugar topping.
  • 14 bake in a 350 degree oven for 45-50 min., till done place on a rack to cool (it will rise "big time" while baking and settle down while cooling.).
