Carrot Spice Cake

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 cups sugar
  • 1 1/2 salad oil
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 (8 ounce) can crushed pineapple
  • 2 tablespoons baking soda
  • 2 teaspoons cinnamon
  • 3 teaspoons vanilla
  • 2 cups carrots, shredded
  • 1 cup nuts, chopped
  • 1 cup brown sugar
  • orange juice

Recipe

  • 1 cake.
  • 2 mix all ingredients except the brown sugar and orange juice, together
  • 3 bake in a well greased and floured tube pan.
  • 4 bake at 325* for 1 1/2 hours.
  • 5 frosting.
  • 6 mix brown sugar with enough orange juice to spread over cake while still warm.
