Carrot Cake

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 1 1/2 cups oil
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 3 cups grated carrots
  • 5 eggs
  • 1 1/2 cups chopped walnuts (optional)
  • 1 (8 ounce) package cream cheese
  • 1/4 cup margarine
  • 1 lb powdered sugar
  • 2 teaspoons vanilla

Recipe

  • 1 for the cake: preheat oven to 350 degrees.
  • 2 combine dry ingredients.
  • 3 stir in oil, eggs and grated carrots.
  • 4 beat for 2 minutes by hand.
  • 5 add nuts and mix thoroughly.
  • 6 bake in greased and floured 13 x 9 inch pan for 45 minutes.
  • 7 for the frosting: beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy.
  • 8 spread on cooled cake.
