Carrot Cake

Ingredients
- 2 cups sugar
- 2 cups flour
- 1 1/2 cups oil
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 3 cups grated carrots
- 5 eggs
- 1 1/2 cups chopped walnuts (optional)
- 1 (8 ounce) package cream cheese
- 1/4 cup margarine
- 1 lb powdered sugar
- 2 teaspoons vanilla
Recipe
- 1 for the cake: preheat oven to 350 degrees.
- 2 combine dry ingredients.
- 3 stir in oil, eggs and grated carrots.
- 4 beat for 2 minutes by hand.
- 5 add nuts and mix thoroughly.
- 6 bake in greased and floured 13 x 9 inch pan for 45 minutes.
- 7 for the frosting: beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy.
- 8 spread on cooled cake.
