Carrot Cake

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 2 cups sugar
  • 4 eggs
  • 1 1/3 cups oil
  • 2 cups flour, presifted
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups grated carrots
  • 8 ounces cream cheese, softened
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1 (8 ounce) can crushed pineapple (optional)

Recipe

  • 1 preheat oven to 350°f.
  • 2 grease & flour three 9-inch cake pans.
  • 3 beat sugar & eggs till thickened.
  • 4 stir in oil.
  • 5 sift flour, soda, baking powder, cinnamon, & salt.
  • 6 stir into egg mixture.
  • 7 fold in carrots.
  • 8 spoon batter into pans.
  • 9 bake for 35-40 minutes until cake tests done.
  • 10 turn onto wire racks & cool.
  • 11 mix together all frosting ingredients.
  • 12 beat until smooth & frost cake.
