Banana Buttermilk Pancakes

Ingredients

- 2 eggs
- 1 cup flour
- 1 cup whole wheat flour
- 2 cups buttermilk (start out with 1 3/4 cups, until you decide how thin or thick you want your batter to be)
- 4 tablespoons oil
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 ripe bananas, mashed
Recipe
- 1 beat all ingredients together until smooth and fluffy.
- 2 (the more air in the batter, the lighter the pancakes.) pour about 1/4 cup onto hot griddle for each cake.
- 3 turn when batter bubbles.
- 4 cook until lightly brown.
- 5 serve with warm maple syrup.
