Blueberry Orange Yogurt Cake

Ingredients

- 1 cup flour
- 1 cup whole wheat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 orange, zest of
- 1 cup nonfat plain yogurt
- 1 cup fresh blueberries
Recipe
- 1 preheat oven to 350°f.
- 2 coat loaf pan with non-stick cooking spray.
- 3 whisk together dry ingredients.
- 4 cream butter until light.
- 5 beat in sugars.
- 6 add vanilla and eggs, one at a time, beating until light.
- 7 add dry ingredients to butter mixture, alternating with yogurt in three additions.
- 8 stir in blueberries and zest.
- 9 pour into prepared pan and bake one hour, until toothpick inserted in center comes out clean.
