Anniversary Strawberry Cheesecake Pie

Ingredients
- 10 ounces sweetened condensed milk
- 8 ounces cream cheese
- 1 egg
- 1/2 teaspoon vanilla
- 2 tablespoons lemon juice, divided
- 1 prepared chocolate wafer pie crust
- 1 quart strawberry
- 1 tablespoon sugar
- 2 tablespoons strawberry jam
Recipe
- 1 (cooking time includes chill time.) preheat oven to 350 degrees.
- 2 incorporate first five ingredients (milk, cream cheese, egg, vanilla, and 1 tbsp lemon juice), adding one at a time into stand mixer and beating thoroughly until smooth.
- 3 pour batter into pie crust and bake for approximately 40 minutes, until set.
- 4 meanwhile, slice strawberries. toss with sugar and remaining lemon juice and allow to macerate in the refrigerator.
- 5 allow pie to cool completely (to room temperature) on a wire rack (approximately 1 hour).
- 6 pour juice which has accumulated from strawberries into a small saucepan, along with the strawberry jam. cook over low heat until warm and slightly thickened.
- 7 arrange strawberries on top of pie and drizzle with sauce. allow pie to chill in refrigerator, at least two hours.
- 8 serve with whipped cream.
