Aeggkage--egg Cake (danish Baked Omelet)

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 10 slices bacon, divided
  • 6 eggs
  • 3 tablespoons flour
  • 4 teaspoons snipped chives, divided
  • salt
  • pepper
  • 2 cups milk
  • 2 large tomatoes, cut in wedges

Recipe

  • 1 preheat oven to 375°f.
  • 2 cut 4 slices of bacon in half.
  • 3 cut remaining bacon into 2" pieces.
  • 4 place all bacon in a 10" oven-proof skillet and cook until crisp.
  • 5 drain on paper towels, shaping the 8 large pieces into curls.
  • 6 tilt frying pan to coat with fat.
  • 7 drain excess fat.
  • 8 line pan with small pieces of bacon.
  • 9 beat eggs with flour, 3 teaspoons chives, salt and pepper.
  • 10 beat in milk.
  • 11 pour over bacon in pan.
  • 12 place in oven and bake 35-40 minutes, or until golden and set.
  • 13 top with bacon curls and remaining chives.
  • 14 serve in wedges, garnished with tomato wedges.
