Buttermilk Pancakes

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 eggs
  • 2 2/3 cups buttermilk
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar

Recipe

  • 1 beat eggs until thick and lemon colored - about 10 minutes (if you use a stand mixer, less time).
  • 2 sift dry ingredients together.
  • 3 add buttermilk and mix with eggs, beating until mixed.
  • 4 add dry ingredients and mix until blended.
  • 5 if thicker or thinner cakes are desired, add or subtract the amount flour.
  • 6 fry in hot oil.
