Buttermilk Pancakes

Ingredients

- 3 eggs
- 2 2/3 cups buttermilk
- 2 cups flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
Recipe
- 1 beat eggs until thick and lemon colored - about 10 minutes (if you use a stand mixer, less time).
- 2 sift dry ingredients together.
- 3 add buttermilk and mix with eggs, beating until mixed.
- 4 add dry ingredients and mix until blended.
- 5 if thicker or thinner cakes are desired, add or subtract the amount flour.
- 6 fry in hot oil.
