Buttermilk Pecan Pancakes

Ingredients
- 3 eggs, separated
- 3 tablespoons butter or 3 tablespoons margarine, melted
- 1 1/2 cups flour
- 1/2-1 cup chopped pecans
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 2/3 cups buttermilk
Recipe
- 1 in a bowl, beat the egg yolks and butter.
- 2 combine flour, pecans, sugar, baking powder, baking soda and salt; add to the egg mixture alternately with buttermilk.
- 3 beat egg whites until stiff peaks form; fold into batter.
- 4 pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.
- 5 cook until second side is golden brown.
- 6 makes 16 pancakes.
