Buttermilk Pecan Pancakes

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • 3 eggs, separated
  • 3 tablespoons butter or 3 tablespoons margarine, melted
  • 1 1/2 cups flour
  • 1/2-1 cup chopped pecans
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups buttermilk

Recipe

  • 1 in a bowl, beat the egg yolks and butter.
  • 2 combine flour, pecans, sugar, baking powder, baking soda and salt; add to the egg mixture alternately with buttermilk.
  • 3 beat egg whites until stiff peaks form; fold into batter.
  • 4 pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.
  • 5 cook until second side is golden brown.
  • 6 makes 16 pancakes.
