Cheesecake Cupcakes

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 12 chocolate wafer cookies, crushed
  • 8 ounces cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 2 tablespoons strawberry liqueur
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 pinch salt
  • 1/2 cup sour cream
  • 4 tablespoons strawberry jam
  • 6 large strawberries (sliced for garnish)

Recipe

  • 1 heat oven to 325. line 12 muffin pan cups with foil cupcake liners. place 1 scant tablespoon crumbs in each.
  • 2 beat cream cheese and sugar until smooth. add eggs and beat until blended. beat in sour cream,liqueur,zest and vanilla. on low speed,beat in flour and salt.
  • 3 spoon about 1/4 batter into each cup. bake at 325 for 35 minutes.
  • 4 topping.
  • 5 stir together sour cream and 2 tablespoons of the jam. spread about 2 tablespoons of the sour cream mixture on top of each cupcake and bake for an additional 5 minutes.
  • 6 remove from oven and cool in pan on wire rack for 30 minutes. remove cupcake to rack to cool completely.
  • 7 melt remaining 2 tablespoons jam. cool slightly. slice strawberries and fan over tops of cupcakes. brush with melted jam.
