Buttermilk Pancakes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 1/4 cups flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 egg, slightly beaten
  • 2 tablespoons vegetable oil
  • 1 1/2 cups buttermilk

Recipe

  • 1 sift dry ingredients into medium bowl.
  • 2 mix egg, oil, and buttermilk together and add to dry ingredients.
  • 3 stir only until dry ingredients have disappeared.
  • 4 preheat lightly coated griddle or skillet over medium heat (if a non-stick pan use pam or small amount of vegetable oil) --
  • 5 if you are using an electric griddle, set temperature to 360-365°f.
  • 6 test by adding a few drops of water on hot pan -- when the drops start to "dance" on the griddle it is time to cook.
  • 7 for each pancake pour about a 1/4 cup of batter onto a hot griddle.
  • 8 cook on first side until bubbles that form begin to pop and edges look dry.
  • 9 with a spatula, turn and cook until second side is rich golden brown. cook on hot griddle.
  • 10 serve with blueberry sauce and dollop of sour cream or lemon yogurt.
