Buttermilk Pancakes

Ingredients
- 1 1/4 cups flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 egg, slightly beaten
- 2 tablespoons vegetable oil
- 1 1/2 cups buttermilk
Recipe
- 1 sift dry ingredients into medium bowl.
- 2 mix egg, oil, and buttermilk together and add to dry ingredients.
- 3 stir only until dry ingredients have disappeared.
- 4 preheat lightly coated griddle or skillet over medium heat (if a non-stick pan use pam or small amount of vegetable oil) --
- 5 if you are using an electric griddle, set temperature to 360-365°f.
- 6 test by adding a few drops of water on hot pan -- when the drops start to "dance" on the griddle it is time to cook.
- 7 for each pancake pour about a 1/4 cup of batter onto a hot griddle.
- 8 cook on first side until bubbles that form begin to pop and edges look dry.
- 9 with a spatula, turn and cook until second side is rich golden brown. cook on hot griddle.
- 10 serve with blueberry sauce and dollop of sour cream or lemon yogurt.
