Carrot Cake

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 3 cups grated carrots
  • 1/2 cup chopped nuts
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup butter, softened
  • 1 lb confectioners' sugar
  • 1/2 cup chopped nuts
  • 2 teaspoons vanilla

Recipe

  • 1 preheat oven to 350°.
  • 2 in a large bowl, mix sugar, oil, and eggs.
  • 3 sift dry ingredients together and gradually add to wet mixture.
  • 4 stir in grated carrots and nuts.
  • 5 pour into a greased and lightly floured 9x13-inch pan or 3 9-inch layer cake pans.
  • 6 bake for 45 minutes.
  • 7 remove from oven and cool on a wire rack.
  • 8 frost with cream cheese frosting.
  • 9 cream cheese frosting: cream butter and cream cheese.
  • 10 add confectioners' sugar and mix well.
  • 11 add nuts and vanilla.
  • 12 spread on cooled cake.
  • 13 note: nuts can be omitted from frosting if desired.
