Carrot Cake

Ingredients
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 2 cups unbleached all-purpose flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 3 cups grated carrots
- 1/2 cup chopped nuts
- 1 (8 ounce) package cream cheese, softened
- 3/4 cup butter, softened
- 1 lb confectioners' sugar
- 1/2 cup chopped nuts
- 2 teaspoons vanilla
Recipe
- 1 preheat oven to 350°.
- 2 in a large bowl, mix sugar, oil, and eggs.
- 3 sift dry ingredients together and gradually add to wet mixture.
- 4 stir in grated carrots and nuts.
- 5 pour into a greased and lightly floured 9x13-inch pan or 3 9-inch layer cake pans.
- 6 bake for 45 minutes.
- 7 remove from oven and cool on a wire rack.
- 8 frost with cream cheese frosting.
- 9 cream cheese frosting: cream butter and cream cheese.
- 10 add confectioners' sugar and mix well.
- 11 add nuts and vanilla.
- 12 spread on cooled cake.
- 13 note: nuts can be omitted from frosting if desired.
