Boiled Raisin Cake (canadian War Cake)

Ingredients
- 2 cups seedless raisins
- 1/3 cup butter
- 1 cup brown sugar, well packed
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 cup hot water
- 2 cups all-purpose flour
- 1/8 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup orange juice
- 1 teaspoon vanilla
Recipe
- 1 mix raisins, butter, brown sugar, spices, and water in heavy saucepan.
- 2 place on high heat and bring to a boil.
- 3 lower heat and simmer for 6 minutes.
- 4 remove from heat and turn raisin mixture into a large bowl.
- 5 let stand at room temperature for 30 minutes.
- 6 meanwhile, combine flour, salt, and baking soda and mix gently.
- 7 add orange juice, vanilla and dry ingredients to cooled raisin mixture and beat well.
- 8 turn batter into a well greased 10 ¼â€? x 3 5/8â€? x 2 5/8â€? loaf pan.
- 9 bake at 350 degrees fahrenheit for 1 hour.
- 10 allow cake to cool in pan for 10 minutes.
- 11 remove from loaf pan and allow to cool completely on wire rack.
- 12 let cake ripen for at least one day before slicing.
