Boiled Raisin Cake (canadian War Cake)

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • 2 cups seedless raisins
  • 1/3 cup butter
  • 1 cup brown sugar, well packed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 cup hot water
  • 2 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup orange juice
  • 1 teaspoon vanilla

Recipe

  • 1 mix raisins, butter, brown sugar, spices, and water in heavy saucepan.
  • 2 place on high heat and bring to a boil.
  • 3 lower heat and simmer for 6 minutes.
  • 4 remove from heat and turn raisin mixture into a large bowl.
  • 5 let stand at room temperature for 30 minutes.
  • 6 meanwhile, combine flour, salt, and baking soda and mix gently.
  • 7 add orange juice, vanilla and dry ingredients to cooled raisin mixture and beat well.
  • 8 turn batter into a well greased 10 ¼â€? x 3 5/8â€? x 2 5/8â€? loaf pan.
  • 9 bake at 350 degrees fahrenheit for 1 hour.
  • 10 allow cake to cool in pan for 10 minutes.
  • 11 remove from loaf pan and allow to cool completely on wire rack.
  • 12 let cake ripen for at least one day before slicing.
