Carrot Cake Cheesecake

Ingredients

- 150 g soft light brown sugar
- 1 1/2 eggs
- 150 ml sunflower oil
- 1/4 teaspoon vanilla extract
- 150 g plain flour
- 1/4 teaspoon bicarbonate of soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 150 g grated carrots
- 300 g cream cheese
- 100 g caster sugar
- 1 tablespoon plain flour
- 1 1/2 eggs
- 125 g vanilla flavoured yoghurt
- 1/2 teaspoon vanilla extract
Recipe
- 1 carrot cake.
- 2 1.preheat oven to 160°c.
- 3 2.mix the brown sugar, eggs, sunflower oil and vanilla extract together.
- 4 3.sift in the flour, bicarbonate of soda, baking powder, cinnamon and ginger and mix until smooth.
- 5 4.stir in the grated carrots then pour into a cake tin and bake for approximately 8 minutes.
- 6 cheesecake.
- 7 1.mix the cream cheese, sugar and flour until smooth.
- 8 2.add the eggs, yoghurt and vanilla extract and continue mixing until smooth.
- 9 3.remove the carrot cakes from the oven and pour the cheesecake mixture into the centre. some of it will mix with the part-baked carrot cake, the rest will sit on top.
- 10 4.return to the oven, reduce the heat to 150c and bake for 20 minutes.
- 11 5.remove the cakes from the oven and leave to cool. the cake should be served cold.
