Cajun Cake Ii

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 2 1/2 cups crushed pineapple, drained
  • 1 1/2 cups sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 eggs
  • 2 1/2 cups flour
  • 1 cup evaporated milk
  • 1/2 cup chopped pecans
  • 1 cup coconut
  • 1 cup sugar
  • 1/4 lb margarine

Recipe

  • 1 cake:.
  • 2 combine all ingredients and mix well. pour into 8x12 inch baking pan that is well greased. bake at 350f for 30 minutes.
  • 3 icing:
  • 4 heat sugar, margarine and milk to boiling. stir once. boil for 7 minutes, add coconut and pecans. beat until thick and cool. pour over cake while still in pan. cut into squares and serve.
