Carrot Cake (bread)

Ingredients
- 2 cups carrots (shredded)
- 2 cups flour
- 1 1/4 cups sugar
- 1 1/4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon ground cloves
- 2 teaspoons vanilla
- 3 egg whites (or substitutes)
- 1/2 cup applesauce
- 1/3 cup boiling water
Recipe
- 1 preheat oven to 350 degrees.sift together all fry ingredients.
- 2 add eggs, vanilla and applesauce to dry and beat on low speed till mixed well.
- 3 add boiling water to carrots and beat on medium speed for 2 minutes.
- 4 pour into bread pan and bake for about 45 minutes let cool overnight.
- 5 cut into 8 or 10 pieces and store in tupperware in the fridge.
- 6 *best results when baked the day before.
