Carrot Cake (bread)

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 cups carrots (shredded)
  • 2 cups flour
  • 1 1/4 cups sugar
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground cloves
  • 2 teaspoons vanilla
  • 3 egg whites (or substitutes)
  • 1/2 cup applesauce
  • 1/3 cup boiling water

Recipe

  • 1 preheat oven to 350 degrees.sift together all fry ingredients.
  • 2 add eggs, vanilla and applesauce to dry and beat on low speed till mixed well.
  • 3 add boiling water to carrots and beat on medium speed for 2 minutes.
  • 4 pour into bread pan and bake for about 45 minutes let cool overnight.
  • 5 cut into 8 or 10 pieces and store in tupperware in the fridge.
  • 6 *best results when baked the day before.
