Carrot Cake

Total Time: 1 hr 25 mins Preparation Time: 1 hr Cook Time: 25 mins

Ingredients

  • 3 cups grated carrots
  • 1 1/2 cups oil
  • 2 cups flour
  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 8 ounces cream cheese
  • 1/2 cup margarine
  • 1 lb powdered sugar
  • 2 teaspoons vanilla
  • 1 cup chopped nuts

Recipe

  • 1 line 3 round cake pans with waxed paper.
  • 2 oil and flour lined pans.
  • 3 mix carrots, flour, eggs and oil.
  • 4 mix sugar, soda, salt, cinnamon.
  • 5 combine two mixtures.
  • 6 bake at 350 degrees for 25 minutes.
  • 7 cool.
  • 8 mix cream cheese, margarine, powdered sugar and vanilla.
  • 9 ice with icing mixture.
  • 10 sprinkle with nuts.
