Carrot Cake

Ingredients
- 3 cups grated carrots
- 1 1/2 cups oil
- 2 cups flour
- 4 eggs
- 2 cups sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 8 ounces cream cheese
- 1/2 cup margarine
- 1 lb powdered sugar
- 2 teaspoons vanilla
- 1 cup chopped nuts
Recipe
- 1 line 3 round cake pans with waxed paper.
- 2 oil and flour lined pans.
- 3 mix carrots, flour, eggs and oil.
- 4 mix sugar, soda, salt, cinnamon.
- 5 combine two mixtures.
- 6 bake at 350 degrees for 25 minutes.
- 7 cool.
- 8 mix cream cheese, margarine, powdered sugar and vanilla.
- 9 ice with icing mixture.
- 10 sprinkle with nuts.
