Carrot Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 10
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/4 cups vegetable oil
  • 2 lbs carrots, grated
  • 4 eggs
  • 1/2 cup nuts (i used walnuts)
  • 2 teaspoons vanilla
  • 1 (16 ounce) container cream cheese frosting

Recipe

  • 1 combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. mix until blended.
  • 2 add oil to flour mixture while mixing. then add the carrots and eggs, one at a time, mixing well after each addition.
  • 3 stir in nuts and vanilla; mix well.
  • 4 pour into a well greased and floured 9x13 pan. bake in a preheated 350°f oven 50 to 60 minutes or until done.
  • 5 allow to cool thoroughly. frost with frosting.
