Carrot Cake

Ingredients
- Servings: 10
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 1/4 cups vegetable oil
- 2 lbs carrots, grated
- 4 eggs
- 1/2 cup nuts (i used walnuts)
- 2 teaspoons vanilla
- 1 (16 ounce) container cream cheese frosting
Recipe
- 1 combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. mix until blended.
- 2 add oil to flour mixture while mixing. then add the carrots and eggs, one at a time, mixing well after each addition.
- 3 stir in nuts and vanilla; mix well.
- 4 pour into a well greased and floured 9x13 pan. bake in a preheated 350°f oven 50 to 60 minutes or until done.
- 5 allow to cool thoroughly. frost with frosting.
