Carrot Cake

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1 cup raisins
  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 3/4 cup melted butter, slightly cooled
  • 1/2 cup milk
  • 2 cups dark brown sugar
  • 2 teaspoons vanilla
  • 8 ounces crushed pineapple
  • 4 cups grated carrots
  • 1 cup chopped walnuts
  • 1 cup grated coconut
  • 1/2 cup butter, softened
  • 8 ounces cream cheese
  • 1 teaspoon vanilla
  • 1 (16 ounce) box confectioners' sugar

Recipe

  • 1 for cake---------------.
  • 2 put raisins in a bowl and cover with boiling water.
  • 3 pre-heat oven to 350 degrees.
  • 4 grease and flour a 9" x 13" cake pan.
  • 5 sift flour, soda, cinnamon and salt together.
  • 6 beat eggs, butter, milk, sugar and vanilla together.
  • 7 drain water from raisins with a sieve.
  • 8 add egg mixture to dry ingredients and mix well.
  • 9 stir in pineapple, carrots, walnuts, coconuts and raisins and mix.
  • 10 pour into pan and bake for about one hour or until a toothpick comes out clean.
  • 11 allow to cool for 20 minutes before removing from pan.
  • 12 cool completely before icing.
  • 13 for frosting----------------.
  • 14 beat butter and cream cheese.
  • 15 add vanilla and sugar and blend well.
