Carrot Cake

Ingredients
- 1 cup raisins
- 2 1/4 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup melted butter, slightly cooled
- 1/2 cup milk
- 2 cups dark brown sugar
- 2 teaspoons vanilla
- 8 ounces crushed pineapple
- 4 cups grated carrots
- 1 cup chopped walnuts
- 1 cup grated coconut
- 1/2 cup butter, softened
- 8 ounces cream cheese
- 1 teaspoon vanilla
- 1 (16 ounce) box confectioners' sugar
Recipe
- 1 for cake---------------.
- 2 put raisins in a bowl and cover with boiling water.
- 3 pre-heat oven to 350 degrees.
- 4 grease and flour a 9" x 13" cake pan.
- 5 sift flour, soda, cinnamon and salt together.
- 6 beat eggs, butter, milk, sugar and vanilla together.
- 7 drain water from raisins with a sieve.
- 8 add egg mixture to dry ingredients and mix well.
- 9 stir in pineapple, carrots, walnuts, coconuts and raisins and mix.
- 10 pour into pan and bake for about one hour or until a toothpick comes out clean.
- 11 allow to cool for 20 minutes before removing from pan.
- 12 cool completely before icing.
- 13 for frosting----------------.
- 14 beat butter and cream cheese.
- 15 add vanilla and sugar and blend well.
