Carrot Cake With Cream Cheese Frosting

Ingredients

  • Servings: 16
  • 1 1/2 cups vegetable oil
  • 2 cups granulated sugar
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1 teaspoon vanilla
  • 1 cup butter or 1 cup margarine, softened
  • 1 teaspoon vanilla
  • 1 lb icing sugar
  • 8 ounces softened cream cheese

Recipe

  • 1 beat oil and granulated sugar approximately 2 minutes.
  • 2 add eggs one at a time and beat inches.
  • 3 beat in sifted flour, baking powder, cinnamon, baking soda and salt.

  • 5 bake at 350° for 40-45 minutes in 9x13-inch pan until tester comes out clean.
