Carrot Cake Cupcakes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/4 cups flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 3 cups grated carrots
  • 1 cup walnuts (chopped)
  • 1 cup coconut (optional)

Recipe

  • 1 in a mixing bowl beat the oil and sugar; add the eggs, one at a time mixing well.
  • 2 add the next 5 ingredients and mix well.
  • 3 grate the carrots (i do it in a food processor) and add to the above.
  • 4 add walnuts and coconut.
  • 5 use cupcake papers that have been lightly sprayed with vegetable spray and fill two-thirds full.
  • 6 bake 350 degrees for about 15-20 minutes.
  • 7 remove from pan and frost when cool.
  • 8 i like a butter frosting but a cream cheese frosting is great too.
