Carrot Cake Cupcakes

Ingredients
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 4 eggs
- 2 1/4 cups flour
- 1 1/2 teaspoons salt
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 3 cups grated carrots
- 1 cup walnuts (chopped)
- 1 cup coconut (optional)
Recipe
- 1 in a mixing bowl beat the oil and sugar; add the eggs, one at a time mixing well.
- 2 add the next 5 ingredients and mix well.
- 3 grate the carrots (i do it in a food processor) and add to the above.
- 4 add walnuts and coconut.
- 5 use cupcake papers that have been lightly sprayed with vegetable spray and fill two-thirds full.
- 6 bake 350 degrees for about 15-20 minutes.
- 7 remove from pan and frost when cool.
- 8 i like a butter frosting but a cream cheese frosting is great too.
