Cafe Beaujolais Sour Cream Waffles

Ingredients

- 2 tablespoons butter
- 1 medium apple, peeled, cored, and sliced
- 1/8 teaspoon cinnamon
- 1 1/2 teaspoons brown sugar
- 2 cups flour
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 tablespoons sugar
- 4 eggs, separated
- 1 cup sour cream
- 1 1/2 cups milk
- 3/4 cup melted butter
- 2 tablespoons melted butter
- 1/2 cup chopped toasted pecans
Recipe
- 1 melt butter in an 8" skillet over moderate heat.
- 2 add apples and cook, stirring frequently, 2 to 3 minutes.
- 3 stir in cinnamon and sugar and reduce heat to low.
- 4 cook covered 2 to 3 minutes or until tender and golden brown.
- 5 cool slightly.
- 6 sift together dry ingredients.
- 7 beat egg yolks with sour cream, milk, and melted butter in a separate bowl until blended.
- 8 stir into dry ingredients until well blended.
- 9 stir in apples and pecans.
- 10 beat egg whites until stiff moist peaks form.
- 11 stir in about 3 tablespoons of the beaten whites into the batter, and gently fold in the remaining egg whites until just combined.
- 12 pour or ladle batter over center two thirds of hot waffle iron.
- 13 close lid and cook about 4 minutes, until steam no longer emerges from the crack.
- 14 remove waffle and keep warm in a warm oven while you cook the rest (or just start serving and watch them disappear).
