Carrot Cake

Ingredients

  • Servings: 12
  • 3 cups sugar
  • 3 cups self rising flour
  • 2 teaspoons cinnamon
  • 1 1/2 cups cooking oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped nuts
  • 12 ounces cream cheese, softened
  • 1/2-1 cup margarine, softened
  • 1 teaspoon vanilla
  • 1 1/2 boxes powdered sugar
  • 1 cup nuts

Recipe

  • 1 grease and flour 2 9-inch or 3 8-inch cake pans.
  • 2 mix all dry cake ingredients.
  • 3 add oil and eggs.
  • 4 add carrots and nuts.
  • 5 mix well.
  • 6 pour into pans and bake 25 to 30 minutes at 350.
  • 7 mix all frosting ingredients well and spread between layers and top of cake.
