Carrot Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 3/4 cup vegetable oil
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 cups carrots, grated

Recipe

  • 1 preheat the oven to 160 degrees celcius. butter a 10″ tube or bundt pan.
  • 2 blend oil and sugar. add eggs, beating well after each addition.
  • 3 sift together flour, salt, cinnamon, and baking soda. add to the egg mixture. stir completely.
  • 4 fold in carrots.
  • 5 pour batter into the pan and bake about 50 minutes, or until a wooden skewer comes out clean when inserted into the cake. cool, then remove from pan by inverting onto a plate.
