Carrot Cake

Ingredients
- 3/4 cup vegetable oil
- 3/4 cup sugar
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup flour
- 1 teaspoon baking soda
- 1 1/2 cups carrots, grated
Recipe
- 1 preheat the oven to 160 degrees celcius. butter a 10″ tube or bundt pan.
- 2 blend oil and sugar. add eggs, beating well after each addition.
- 3 sift together flour, salt, cinnamon, and baking soda. add to the egg mixture. stir completely.
- 4 fold in carrots.
- 5 pour batter into the pan and bake about 50 minutes, or until a wooden skewer comes out clean when inserted into the cake. cool, then remove from pan by inverting onto a plate.
