Apple Breakfast Cake

Ingredients
- 5 medium apples
- 1/3 cup granulated sugar
- 2 teaspoons cinnamon
- 2 cups granulated sugar
- 4 eggs
- 2 1/2 teaspoons vanilla
- 1 cup vegetable oil
- 1/2 cup orange juice
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
Recipe
- 1 peel and slice apples; set aside.
- 2 combine sugar and cinnamon and reserve.
- 3 in a large mixing bowl, beat together sugar, eggs, vanilla, oil and orange juice.
- 4 in a separate bowl, stir together flour, baking powder and salt.
- 5 stir into egg batter until smooth.
- 6 spoon half of the batter into a greased and floured 10-inch bundt pan.
- 7 distribute the apples evenly over the batter and sprinkle on half of the cinnamon mixture.
- 8 pour in the remaining batter and sprinkle on the remaining cinnamon mixture.
- 9 bake at 350 degrees f for 1 hour and 15 minutes or until a tester inserted into the middle of the cake comes out clean.
- 10 let cool for 1 hour on a rack before turning out to finish cooling.
