Ingredients

- 2 cups granulated sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 2 cups sifted flour
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups carrots, grated
- 1/2 cup pecans, chopped
- 8 ounces cream cheese
- 1 lb confectioners' sugar
- 1/4 lb butter
- 1/2 cup coconut, grated
- 2 teaspoons vanilla extract
Recipe
- 1 cake.
- 2 combine sugar and oil.
- 3 add eggs and beat until well mixed.
- 4 mix in flour, cinnamon, baking soda & salt.
- 5 slowly mix in carrots & nuts.
- 6 pour into a 9" x 13" pan and bake at 325 degrees for 50 - 60 minutes.
- 7 cool before frosting.
- 8 frosting.
- 9 soften butter.
- 10 combine cream cheese, confectioners sugar, butter, coconut and vanilla extract.
- 11 beat and apply to cooled caked.
- 12 apply to cooled cake.
