Chocolate Drop Cookies

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup vegetable shortening
  • 1 cup brown sugar
  • 2 eggs, separated
  • 2 ounces semisweet baking chocolate, melted
  • 1 3/4 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 1/2 cup milk
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 preheat oven to 350°f.
  • 2 cream shortening and sugar with electric mixer (stand or handheld). when light and fluffy, beat in egg yolks and melted chocolate.
  • 3 sift together flour, baking powder, baking soda, and salt. add dry ingredients to creamed shortening alternately with milk, starting and ending with dry mixture.
  • 4 beat egg whites to stiff peaks in a separate bowl. fold beaten egg whites into batter by hand; fold in walnuts if using.
  • 5 drop teaspoonfuls of cookie dough onto greased cookie sheets. bake 7-9 minutes until edges of cookies are slightly crisp. cool briefly on cookie sheet, then transfer to a rack until completely cool. store in airtight containers.
