Chocolate Drop Cookies

Ingredients
- 1/2 cup vegetable shortening
- 1 cup brown sugar
- 2 eggs, separated
- 2 ounces semisweet baking chocolate, melted
- 1 3/4 cups cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon table salt
- 1/2 cup milk
- 1/2 cup chopped walnuts (optional)
Recipe
- 1 preheat oven to 350°f.
- 2 cream shortening and sugar with electric mixer (stand or handheld). when light and fluffy, beat in egg yolks and melted chocolate.
- 3 sift together flour, baking powder, baking soda, and salt. add dry ingredients to creamed shortening alternately with milk, starting and ending with dry mixture.
- 4 beat egg whites to stiff peaks in a separate bowl. fold beaten egg whites into batter by hand; fold in walnuts if using.
- 5 drop teaspoonfuls of cookie dough onto greased cookie sheets. bake 7-9 minutes until edges of cookies are slightly crisp. cool briefly on cookie sheet, then transfer to a rack until completely cool. store in airtight containers.
