Andes Mint Cheesecake

Total Time: 7 hrs 45 mins Preparation Time: 7 hrs Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 2 (3 ounce) packages junior mints
  • 3 (8 ounce) packages cream cheese, softened
  • 2/3 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 graham cracker crust or 1 chocolate crumb crust

Recipe

  • 1 put mints in freezer and freeze.
  • 2 heat oven to 350 degrees.
  • 3 mix cream cheese and sugar until smooth.
  • 4 add eggs, one at a time beating after each.
  • 5 mix in vanilla.
  • 6 chop frozen junior mints and sprinkle on cheesecake.
  • 7 bake 40-45 minutes or until set.
  • 8 cool.
  • 9 then chill over night.
