Cauliflower And Carrot Latkes

Ingredients
- 4 cups cauliflower florets
- 2 eggs, lightly beaten
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 large carrot, peeled and grated
- 1/2-1 cup oil (for frying)
Recipe
- 1 cook cauliflower in a large pot of salted water until tender, abour 12 minutes.
- 2 drain and let cool.
- 3 puree cauliflower with eggs and stir in remaining ingredients except oil.
- 4 in a large frying pan over medium-high heat, heat about 1/2 cup oil until hot.
- 5 ladle 3 tablespoons batter into pan to form each pancake.
- 6 fry until golden, about 3 minutes per side.
- 7 use more oil as needed for each batch.
- 8 drain on paper towels and keep warm in a 250 degree f. oven.
- 9 serve as soon as all are done.
