Cauliflower And Carrot Latkes

Total Time: 43 mins Preparation Time: 25 mins Cook Time: 18 mins

Ingredients

  • 4 cups cauliflower florets
  • 2 eggs, lightly beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1 large carrot, peeled and grated
  • 1/2-1 cup oil (for frying)

Recipe

  • 1 cook cauliflower in a large pot of salted water until tender, abour 12 minutes.
  • 2 drain and let cool.
  • 3 puree cauliflower with eggs and stir in remaining ingredients except oil.
  • 4 in a large frying pan over medium-high heat, heat about 1/2 cup oil until hot.
  • 5 ladle 3 tablespoons batter into pan to form each pancake.
  • 6 fry until golden, about 3 minutes per side.
  • 7 use more oil as needed for each batch.
  • 8 drain on paper towels and keep warm in a 250 degree f. oven.
  • 9 serve as soon as all are done.
