Blueberry Bundt Cake

Ingredients
- 2 1/4 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1 cup buttermilk
- 3/4 cup vegetable oil
- 2 tablespoons orange juice concentrate
- 2 cups blueberries
- 1 cup chopped walnuts
Recipe
- 1 preheat oven to 350 degrees.
- 2 grease a 12 cup bundt pan.
- 3 in a medium bowl combine dry ingredients.
- 4 in a large bowl blend together eggs, buttermilk, oil and orange juice concentrate.
- 5 add dry ingredients, mix thoroughly.
- 6 fold in blueberries and nuts.
- 7 spoon into pan.
- 8 bake 45 minutes or until toothpick inserted in middle of cake comes out clean.
- 9 cool in pan on wire rack for 1 hour before inverting onto plate.
- 10 garnish with whipped cream.
