Blueberry Bundt Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 1/4 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 3/4 cup vegetable oil
  • 2 tablespoons orange juice concentrate
  • 2 cups blueberries
  • 1 cup chopped walnuts

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease a 12 cup bundt pan.
  • 3 in a medium bowl combine dry ingredients.
  • 4 in a large bowl blend together eggs, buttermilk, oil and orange juice concentrate.
  • 5 add dry ingredients, mix thoroughly.
  • 6 fold in blueberries and nuts.
  • 7 spoon into pan.
  • 8 bake 45 minutes or until toothpick inserted in middle of cake comes out clean.
  • 9 cool in pan on wire rack for 1 hour before inverting onto plate.
  • 10 garnish with whipped cream.
