Ingredients

- 9 ounces self-rising flour
- 1/4 teaspoon mixed spice, ground
- 1 pinch cinnamon
- 2 ounces currants
- 2 ounces almonds, ground
- 7 ounces sugar
- 4 ounces butter, melted
- 1 egg, beaten
- sugar, and cinnamon to sprinkle
Recipe
- 1 set oven to 400 or mark 6.
- 2 grease a baking tray.
- 3 sift flour and spices into a mixing bowl, stir in the currants, ground almonds and sugar.
- 4 add melted butter and egg, stirring to make a soft dough.
- 5 roll on a floured surface to a rectabgle approximately 10" x 20".
- 6 brush the dough with water, sprinkle with the sugar and cinnamon.
- 7 roll up like a swiss roll, cut into slices 3/4 inch thick.
- 8 place on baking sheet, well apart, and bake for 10 to 15 minutes.
- 9 cool on wire rack.
