Blue Corn Waffles

Ingredients
- 1/2 cup blue cornmeal
- 1/2 cup all-purpose flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon brown sugar
- 1 1/8 cups low-fat buttermilk
- 1 large egg
Recipe
- 1 in a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar. whisk gently to blend. (mix may be stored at this point in the refrigerator).
- 2 preheat waffle iron.
- 3 whisk together buttermilk and egg until well blended.
- 4 fold the dry mix into the wet mixture until evenly moistened.
- 5 pour about 1 cup of batter into the waffle iron and cook through.
