Blue Corn Waffles

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup blue cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon brown sugar
  • 1 1/8 cups low-fat buttermilk
  • 1 large egg

Recipe

  • 1 in a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar. whisk gently to blend. (mix may be stored at this point in the refrigerator).
  • 2 preheat waffle iron.
  • 3 whisk together buttermilk and egg until well blended.
  • 4 fold the dry mix into the wet mixture until evenly moistened.
  • 5 pour about 1 cup of batter into the waffle iron and cook through.
