Apple Crumb Cake

- 3 cups flour
- 1 1/2 cups sugar
- 1/2 cup light brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon baking soda
- 4 eggs, lightly beaten
- 1 1/4 cups mayonnaise (do not use reduced fat or fat free)
- 1 teaspoon vanilla extract
- 1 large tart apple, peeled and finely chopped
- 1 cup flour
- 3/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup mayonnaise (do not use reduced fat or fat free)
Recipe
- 1 preheat oven to 350. grease a 13" x 9" baking pan; set aside.
- 2 cake:.
- 3 in a large mixing bowl, combine flour, sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger and baking soda; set aside.
- 4 in a seperate mixing bowl, whisk together eggs, mayonnaise and vanilla until well-blended and smooth.
- 5 mix chopped apples into the flour mixture; then stir in the egg/mayo/vanilla mixture. stir until well-combined. the batter will be stiff. evenly spread dough into prepared 13" x 9" pan.
- 6 crumb topping:.
- 7 in a mixing bowl, combine all crumb topping ingredients and mix well to form course crumbs. sprinkle crumbs over batter in pan.
- 8 bake at 350 for 50 minutes or until a toothpick inserted in the center comes out clean and crumb topping is golden.
- 9 cool in pan on wire rack. serve warm or at room temperature.
