Apple Crumb Cake

Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup light brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 4 eggs, lightly beaten
  • 1 1/4 cups mayonnaise (do not use reduced fat or fat free)
  • 1 teaspoon vanilla extract
  • 1 large tart apple, peeled and finely chopped
  • 1 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup mayonnaise (do not use reduced fat or fat free)

Recipe

  • 1 preheat oven to 350. grease a 13" x 9" baking pan; set aside.
  • 2 cake:.
  • 3 in a large mixing bowl, combine flour, sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger and baking soda; set aside.
  • 4 in a seperate mixing bowl, whisk together eggs, mayonnaise and vanilla until well-blended and smooth.
  • 5 mix chopped apples into the flour mixture; then stir in the egg/mayo/vanilla mixture. stir until well-combined. the batter will be stiff. evenly spread dough into prepared 13" x 9" pan.
  • 6 crumb topping:.
  • 7 in a mixing bowl, combine all crumb topping ingredients and mix well to form course crumbs. sprinkle crumbs over batter in pan.
  • 8 bake at 350 for 50 minutes or until a toothpick inserted in the center comes out clean and crumb topping is golden.
  • 9 cool in pan on wire rack. serve warm or at room temperature.
