Chocolate Cookie Cheesecake

Ingredients

- 1 1/2 cups crumbled cream-filled chocolate sandwich cookies (about 16 cookies)
- 3 tablespoons butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 1/2 cups semi-sweet chocolate chips, melted and cooled
- 3 teaspoons vanilla extract
- 4 eggs, lightly beaten
- 20 chocolate cream-filled chocolate sandwich cookies, coarsely chopped
Recipe
- 1 in a small bowl, combine cookie crumbs and butter. press into the bottom of a greased 9 inch springform pan.
- 2 refrigerate while preparing filling.
- 3 in a large bowl, beat cream cheese and sugar until smooth.
- 4 beat in chocolate and vanilla.
- 5 add eggs, beat on low speed just until combined.
- 6 fold in half of chopped cookies.
- 7 pour over crust and sprinkle with remaining cookies.
- 8 place pan on a baking sheet and bake at 325* for 50-60 minutes or until center is almost set and top appears dull.
- 9 cool on a wire rack for 10 minutes.
- 10 carefully run a knife around edge of pan to loosen; cool 1 hour longer.
- 11 refrigerate overnight.
