Chocolate Cookie Cheesecake

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups crumbled cream-filled chocolate sandwich cookies (about 16 cookies)
  • 3 tablespoons butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 1/2 cups semi-sweet chocolate chips, melted and cooled
  • 3 teaspoons vanilla extract
  • 4 eggs, lightly beaten
  • 20 chocolate cream-filled chocolate sandwich cookies, coarsely chopped

Recipe

  • 1 in a small bowl, combine cookie crumbs and butter. press into the bottom of a greased 9 inch springform pan.
  • 2 refrigerate while preparing filling.
  • 3 in a large bowl, beat cream cheese and sugar until smooth.
  • 4 beat in chocolate and vanilla.
  • 5 add eggs, beat on low speed just until combined.
  • 6 fold in half of chopped cookies.
  • 7 pour over crust and sprinkle with remaining cookies.
  • 8 place pan on a baking sheet and bake at 325* for 50-60 minutes or until center is almost set and top appears dull.
  • 9 cool on a wire rack for 10 minutes.
  • 10 carefully run a knife around edge of pan to loosen; cool 1 hour longer.
  • 11 refrigerate overnight.
