Cherry Cheesecake Cups

Ingredients

- 1 (18 1/4 ounce) package duncan hines moist deluxe devil's food cake mix (or the classic yellow cake mix)
- 1/4 cup margarine or 1/4 cup butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups sour cream
- 1/4 cup sugar
- 1 (21 ounce) can cherry pie filling (or whatever is your fave flavor)
Recipe
- 1 preheat oven to 350 degrees, and place foil or paper liners in 24 (2 1/2 inch) muffin cups.
- 2 for crust:.
- 3 combine cake mix and melted margarine in a large bowl.
- 4 beat at low speed with electric mixer for 1 minute. mixture will be crumbly.
- 5 divide mixture evenly among the muffins cups; level them, but do not press down.
- 6 for cheese filling:.
- 7 combine cream cheese, eggs, 3/4 cup sugar, and vanilla extract in medium bowl.
- 8 beat at medium speed with electric mixer, until smooth.
- 9 spoon evenly into muffin cups, and bake for 20 minutes, or until set.
- 10 for topping:.
- 11 combine sour cream and 1/4 cup sugar in a small bowl.
- 12 spoon evenly over cheesecakes and return to oven for 5 minutes.
- 13 cool completely then garnish each cheesecake with cherry pie filling.
- 14 refrigerate until ready to serve.
